I love making Air Fryer Pecan Pie Bars because they give me everything I love about pecan pie without the stress of making and serving a whole pie. A firm buttery shortbread crust under a rich, gooey filling of eggs, brown sugar, corn syrup, and vanilla packed with chopped pecans, baked until just set and sliced into clean beautiful bars. The air fryer gets them done evenly and quickly, and they firm up perfectly as they cool. I make them for Thanksgiving, Christmas, and holiday bake sales because they pack well and always disappear first.
